Chocolate Banana Smoothie
I never expected this to be as delicious as it was. MAKE IT.
Ingredients (serves 2 people)
- 1 peeled, frozen banana
- 3/4 cup light chocolate almond milk
- 1 teaspoon cocoa powder
- 2 tablespoons fat-free Greek yogurt
- 1 tablespoon peanut butter (or a bit more if you like peanut butter a lot)
- 1 teaspoon honey
- 6-8 ice cubes
Instructions
- Unpeel the banana and put it either a Ziplock baggie or container and freeze for 12 hours.
- Put all the ingredients in a blender and puree until your desired consistency.
I've been drinking these either late at night for a snack or when I'm in a hurry in the morning and can't make breakfast. My God, it's tasty. (Oh, and if you like that glass up top there, it's from Ikea and it was $2.50 and I love it. I bought two of them and one is my Q-tip holder in the washroom. Such great glasses.)
Peanut Butter, Strawberry & Banana Quesadillas
I can't tell you how CRAZY GOOD THESE ARE.
I'm still not sure if this is an acceptable dish to be served at breakfast, but that's what I've been doing so you should, too. (Also, if you want to turn this into a dessert, then I suggest replacing the peanut butter with Nutella. Your mind will implode.)
Ingredients
Cooking spray
Natural creamy peanut butter
2 wholewheat tortillas
1 large ripe banana, sliced
3-4 strawberries, sliced
1/8 teaspoon cinnamon
Instructions
- Heat a medium skillet over medium high heat and spray the pan with cooking spray.
- Spread a thin layer of peanut butter on one side of each tortilla.
- Arrange both the banana and strawberry slices over one tortilla, sprinkle with a pinch of cinnamon, and top with the remaining tortilla, peanut butter side down. Press gently to help them stick together.
- When the skillet is hot, add the quesadilla, flipping once or twice, until golden brown, about 2 minutes per side. Cut each quesadilla into quarters with a pizza slicer. Serves 1-2.

Healthy Banana Pancakes
As you already know, I'm into making pancakes. And this (flourless) recipe is, surprisingly, really good. Definitely try it out. All I ask of you is to please, oh, please get some pure (and likely Canadian) maple syrup to accompany your meal. Ignore the cheap, sugary brands and get the expensive, simple-ingredient-list kind of maple syrup. I know that it's easy to indulge in that corn-syrupy trash (and I am not one to judge), but c'mon. We can't live our lives on Mrs. Butterworth. (And to be fair, I only excessively endorsed that IHOP stuff whilst on vacation, if that helps my case at all. And clearly, my vacation self gives in to food temptation.)
Yonanas - A Review
Yonanas is an ice cream treat maker. I recently got one (thanks Gary & Amanda!) and there are a few things you should know about it.
How do you use it? You freeze up some fruit (minus the peels, if there are peels) and make sure that it's in your freezer in some kind of ziplock/tupperware-like container. Once it's frozen (a few hours), you can use it in the machine and make ice cream. And there's nothing added, it's pure frozen fruit. So if dairy is ever a problem for you, then you need this machine immediately.
Things You Should Know
- Do not try this with old, disgusting frozen fruit that has been sitting in your freezer for at least a year. I tried this genius idea and it spewed out little pieces of blueberry garbage. And since this was my maiden voyage of using this machine, I was deeply hurt that it didn't turn out like what was in the infomercial. I was in the wrong here, not the machine. DO NOT USE OLD FROZEN FRUIT.
- This stuff really does have the consistency of ice cream. It's weird. I tried some peeled cantaloupe next and... wow. If I'm ever adult enough to throw dinner parties or even to make a meal for my parents, this dessert is definitely being made. So classy! Cantaloupe ice cream? Get out of here. I'll be admissible for country clubs if word gets out.
- While the cantaloupe one was good, the bananas one? Out of this world. Just amazing. If you are ever at my house, demand that I make you some of the banana.
- Also, that photo up top? Whatever is in that bowl looks gross and is NOT the way that the fruit comes out. It's way more ice cream-y looking.
There are some great recipes here, which I'll try eventually once I've calmed down from the banana. It's usually around $55 and completely worth it. You can get one on Amazon, but you might be able to find a cheaper one in a Wal-Mart or Target possibly.
